1 c. buttermilk
2 tbsp. vegetable oil
1 egg
1 tsp. baking powder
1/2 tsp. baking soda
1/2 c. whole wheat flour
1/2 c. unbleached white flour (part soy flour and part wheat germ can be used)
1/2 tsp. salt

Directions:
Directions:
Combine buttermilk, oil, and egg in a bowl and mix with a fork. Add remaining ingredients and mix only until moistened. Fry in hot, lightly greased skillet. Optional: Add 1/2 c. applesauce (or other fruit sauce) and a dash of cinnamon to 1 1/2 - 2 c. pancake batter and decrease milk slightly. (From More With Less)
