3/4 c. milk
2 tbsp. vinegar
1 c. flour (white, whole wheat, or mixed)
2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
2 tbsp. olive oil

Directions:
Directions:
Combine milk with vinegar in medium bowl and set aside 10 minutes to “sour.” Combine dry ingredients. Whisk egg and oil into soured milk. Mix liquid into dry ingredients and whisk until lumps are gone. Let sit 10 minutes - bubbles will appear in the batter. Pour 1/4 C scoops onto greased skillet. Cook until golden brown, flip and cook other side until golden brown. If adding banana, it works best to use chopped instead of mashed or you will need to add more flour. Makes about 9 pancakes.
