4 c. oats
1 1/2 c. sliced almonds (optional)
1/2 c. brown sugar, packed
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 c. oil
1/4 c. honey
1 tsp. vanilla
1 1/2 c. raisins or other dried fruit

Directions:
Preheat oven to 300 degrees F. In a large bowl, mix oats, almonds, brown sugar, salt, and cinnamon. Set aside. In a saucepan, warm the honey and oil. Whisk in vanilla. Carefully pour liquid over oat mixture. Stir gently. Spread granola in 15x10 baking sheet. Bake 40 minutes, stirring every 10 minutes. Transfer pan to wire rack to cool. Stir in fruit. Seal granola in airtight container. Store at room temp for 1 week or in freezer for 3 months.
