6 boiled eggs
1 tablespoon curry powder
1/4 cup vegetable oil
1/4 teaspoon grated ginger
1/4 teaspoon grated garlic
2 cups water
1 small hot pepper
Salt and pepper to taste

Directions:
Directions:
Hard boil eggs for 10 minutes. Drain and peel.
Heat oil in saucepan and add curry powder, salt, pepper, garlic, ginger and mix.
Add peeled hard boiled eggs in pan and simmer for 5 minutes.
Turn over until eggs are brown all over.
Add water and simmer for 10 minutes.
Remove from pan and serve with roti or rice.
