20 medium ripe pears
4 c. sugar
1 tsp. grated orange rind
1/3 c. fresh orange juice
1/2 tsp. nutmeg

Directions:
Directions:
Wash and core pears. In large pot cook pears in a small amount of water until soft. Run through a food mill to remove skin. Measure 2 quarts pear pulp. In a large pot with the pear pulp add remaining ingredients. Cook 20-30 minutes until liquid no longer looks watery and gels on a spoon. Pour immediately into clean sterile canning jars and seal. Process in a boiling water bath for 10 minutes. Store in cool dark place until used.
