4 salmon fillets
Flour
1 egg slightly beaten w/1 T. water
1/2 small red onion, chopped
Sliced almonds, crushed
4 c. diced fresh fruit (mango, pineapple, kiwi, pear, apple or any other favorite fruit)
2 T. honey
Juice of 1 lime
2 T. cilantro or parsley, chopped fine
1 jalapeño pepper split, seeded and minced
Olive oil

Directions:

Lightly pound salmon fillets to an even thickness. Dredge in flour, dip in egg wash, and cover with crushed almonds. Refridgerate while making the salsa.
Combine diced fruit, onion, honey, lime juice, cilantro or parsley and jalapeño pepper. Toss together and chill. In a skillet, heat olive oil to medium heat; fry fish until golden brown on both sides. If you prefer, bake fish at 350º until fish is firm to touch. DO NOT OVER BAKE! Top with Fruit salsa and serve with fried spinach.
