Frosted Banana Cookies Recipe

3/4 c. shortening
3/4 c. brown sugar
1 egg
1 tsp. vanilla
2 ripe bananas (or 5 small ones)
1/4 tsp. salt
1 tsp. baking soda
2 c. flour

Icing:
6 tbsp. brown sugar
4 tbsp. margarine
4 tbsp. cream (I used boiled milk with a little bit of cream stirred back in)
1/2 tsp. vanilla
Powdered sugar

Directions:
Directions:
Cream shortening and sugar. Add egg and vanilla, then bananas. Beat well. Sift dry ingredients and add to banana mixture. Drop by teaspoon on greased cookie sheet. Bake at 180 degrees C for 10 minutes or in a 10x15 jelly roll pan for 15 minutes. Making icing

Icing:
Combine brown sugar, margarine, and cream in a pot and bring to a boil. Remove from heat and add vanilla and then enough powdered sugar to spread well. (I use a mixer to add in the powdered sugar.)

These cookies freeze well too. They are great if you take them out of the
freezer and let thaw a little bit (or stick them in the microwave).
