1 (8 oz.) pkg. cranberry gelatin (since it's hard to find, I just use black cherry)
1 1/2 c. boiling water
1 1/2 c. cold cranberry juice
1/2 tsp. cinnamon
1 medium apple, chopped
1 c. Ocean Spray Whole Berry Cranberry Sauce
1 (8 oz.) pkg. Philly Brand Cream Cheese (softened in microwave 10-20 seconds)

Add gelatin to boiling water in a large bowl; stir until completely dissolved. Stir in cranberry juice and cinnamon. Pour 2 cups of the gelatin into a medium bowl (reserve the remaining 1 cup gelatin at room temperature). Refrigerate about 1 1/2 hours or until thickened. Stir apple and cranberry sauce into thickened gelatin. Spoon into a 6-cup mold. Refrigerate about 30 minutes until set but not firm. In a small bowl, stir reserved cup of gelatin gradually into cream cheese; whisk with a wire whisk until smooth. Pour over gelatin layer in mold. Refrigerate 4 hours or until firm. Unmold onto a serving dish. Makes 8 to 10 servings.
