3/4 c. dried cranberries
1/3 c. orange juice
1 1/2 c. all-purpose flour
1 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
1/2 c. unsalted butter, softened
1/2 c. granulated sugar
1/2 c. firmly packed light brown sugar
1 large egg
2 tsp. orange zest
1 tsp. vanilla extract
1 c. old fashioned oats
4 oz. white chocolate, chopped (or white chocolate bits)

Directions:

Combine first 2 ingredients in a small bowl. Microwave on high for 30 seconds; cover and let stand for 2 hours; drain. Preheat oven to 350º. Whisk flour and next 3 ingredients in a medium bowl. Beat butter at medium speed with an electric mixer until fluffy; gradually beat in granulated and brown sugars. Beat in egg, orange zest, and vanilla. Add flour mixture, and beat at low speed just until combined. Stir in oats, chocolate and cranberries. Drop by rounded spoonfuls 2 inches apart onto a greased or parchment paper lined baking sheet. Bake in batches 10-12 minutes or until edges just begin to brown. Cool on baking sheets 5 minutes; transfer to wire racks and cool completely. Makes about 3 dozen.
