Bone-in, skin on, chicken breasts (one per person)
olive oil
salt and pepper
Your choice of lemon juice and zest, or fresh herbs such as rosemary, oregano, thyme, etc.

Directions:
Directions:
Heat oven to 375º.

Cover baking sheet in foil and spray with olive oil.

Spray front and back or each chicken breast with olive oil and salt and pepper. Arrange chicken on baking sheet breast side up. Run your fingers under the skin of the breast meat and place herbs or lemon juice and zest between the skin and breast meat. Stretch the skin back over the breast.

Bake for 30-35 minutes until skin is golden brown and meat is cooked through. Remove skin and herbs before serving.
