1 1/2 cups cprnmeal
1/2 cup plain flour
2 tsp baking powder
1 tsp salt
1 t sugar
1/2 t baking soda
1/4 c bacon fat (or shortening)
1 1/2 cups buttermilk
2 eggs (room temperature)

Directions:
Directions:
Preheat oven to 450º. Mix all ingredients. Pour into hot greased iron skillet (have 1-2 Tbs of grease in pan) or muffin pans. Put skillet on medium high heat until corn bread sets in pan. Put in oven and bake until golden brown (knife in center comes out clean). No giggly middle.
