4 to 5 medium potatoes, peeled and finely diced
4 c. water
4 chicken bouillon cubes
1 medium onion, finely diced
1 c. shredded carrots
1/2 c. butter
1/2 c. all-purpose flour
4 c. milk or half & half
4 c. (1 lb.) shredded cheese (cheddar or Colby) I use 2 cups cheddar and 2 cups Velveeta.
1/2 tsp. hot sauce

Directions:
Directions:
Combine water and bouillon cubes in stock pot and bring to boil. Add vegetables and cover; simmer for 15 minutes or until vegetables are tender. Meanwhile, melt butter in a large sauce pan; which is flour and cook for 1 minute. Add milk or half & half gradually, cooking over medium heat until mixture thickens. Stir constantly. Add cheese and stir until it is melted. Stir cheese sauce into the vegetable mixture, blending well. Simmer (DO NOT BOIL) over low heat until the chowder is thoroughly heated. Serves 8
