1/2 cup olive oil
1/3 cup soy sauce
4 scallions, cut in thirds
2 large garlic cloves
1/4 cup lime juice
1/2 tsp. red pepper flakes
1/2 tsp. cumin
3 tbsp. brown sugar
2 lbs. skirt steak, cut in 3 pieces

Directions:

Combine ingredients into blender and puree. Place steak pieces in large plastic bag and pour in marinade, completely covering steak. Remove air from bag and seal. Allow to marinate at least 1 hour. When ready, preheat grill hot. Grill steaks, saving marinade, about 1-2 minutes on each side so the steaks are rare. When done wrap steaks in foil, tossing with the extra marinade, and allow to sit for about 10-15 minutes.
To serve, slice steaks thinly across the grain and pour remaining juices and marinade on top.
