1 c. chicken broth
2 bay leaves or 2 tbsp. oregano or basil
1 small onion, chopped finely
4 tbsp. lemon juice
2 tsp. thyme
2 tbsp. lemon zest
Salt and pepper to taste
4 tbsp. butter or margarine

Directions:
Directions:
Heat 1/2 C chicken broth, onion, bay leaves, and thyme in a saucepan. Boil until reduced to 1 Tbsp. Add 1/2 C chicken broth and simmer 2 minutes. Stir in lemon juice, lemon zest, and butter. Remove bay leaves and season with salt and pepper. Excellent when added to stews, chicken, or rice dishes.
