3 c. whole fresh cranberries
1 orange, unpeeled, quartered and seeded
1 tart apple, unpeeled, quartered and cored
3/4 c. sugar
1/8 tsp. salt
1/4 tsp. cinnamon
1/2 c. golden raisins
1/2 c. dried apricots, chopped
1/2 c. chopped pecans

Directions:
Directions:
Coarsely grind the first 3 ingredients. Stir in sugar and cinnamon; set aside. Cook raisins and apricots in 1/2 c. water over medium heat until raisins are plump, about 5-10 minutes. Drain and stir raisins, apricots and pecans into cranberry mixture. Refrigerate overnight to allow flavors to blend. Yields approximately 3 1/2 c. relish.
