4 Tilapia fillets (4 ounces each)
1/4 tsp. salt
1/4 tsp. pepper
1 T. butter
1 medium tomato, thinly sliced
TOPPING
1/2 cup soft bread crumbs
1/4 cup chopped walnuts
2 T. lemon juice
1 1/2 tsp. butter, melted

Directions:

Sprinkle fillets with salt and pepper. In a large ovenproof skillet coated with nonstick cooking spray, cook fillets in butter over medium-high heat for 2-3 minutes on each side or until lightly browned.

Place tomato slices over fish. Combine the topping ingredients; spoon over tomato. Broil 3-4 inches from the heat for 2-3 minutes or until topping is lightly browned and fish flakes easily with a fork.

Note: Plum tomatoes work well for this dish. You may need 2 depending on the size of the tomatoes.

This dish can be prepared on a disposable baking sheet for easy cleanup. Grandpa uses disposable baking sheets for the Coffee-Butter recipe too. The sheet gets splattered and you can just throw it away!
Serve with crusty rolls, salad, and a rice dish or cooked carrots.
