1 c. jumbo lump or backfin crab meat
1 c. special crab meat
1/2 c. mayonnaise
1/2 tsp. freshly ground black pepper
1/2 lemon, juiced
1 1/2 c. Panko bread crumbs
vegetable oil, for frying

Directions:
Directions:
Heat vegetable oil to 375º F. In a bowl, combine the crab meat, mayo, and pepper. Form into 1 oz. balls for fritters. (A #24 ice cream scoop works well.) Roll each ball in Panko to evenly coat. Deep fry in heated oil until golden brown, about 5-7 minutes. Drain on paper towels. Serve immediately.
