3 c. milk (can use vanilla soy)
1 T. butter
5 t. sugar
1/2 t. salt
1 c. polenta (cornmeal)
3 t. vanilla
2 T. maple syrup
Optional 1/4 c. golden raisins

Directions:
Directions:
Butter 8 1/2 x 4 1/2 loaf pan. Combine milk, butter, sugar, salt and vanilla in a large pot; heat to a simmer, slowly add polenta. Whisk constantly. Lower heat, stirring 10 minutes. Add in raisins and maple syrup. At this point if you want you can eat it like a porridge or pour it into loaf pan. Refrigerate overnight, in the morning, unmold and cut into 1/2 inch slices. Saute in butter until golden. Serve with syrup.
Savory; add 1/2 c. cheese, and or diced green chilies.

This is a good make ahead breakfast. It is a gluten free option and if you make it with soy milk it can be dairy free also (if you leave out the butter). Play with the amount of sugar in the recipe. I like it sweet. This recipe can also be used for savory fried polenta, just leave out the sugar and add cheese and chile peppers!
