2 c. spelt kernels
8 c. water
1/2 t. salt

Pour grain into Vitamix, blend for 45 seconds to 1 minute, blend fine. In a large pot combine blended spelt, salt and water. Bring to a boil, turn to low and simmer 15 to 20 minutes, stirring often. Great with brown sugar and heavy whipping cream.

My kids like cream of wheat but it can be expensive to buy it in the box. This recipe handed down by Mrs. Rust was a good substitute. I still buy it in the box for a fun, quick breakfast!
