3 cups flour (wheat and white), 6 t. baking powder, 1 1/2 t. salt, 3/4 t. nutmeg, 6 T. sugar, 3 eggs, 3 cups buttermilk (can use regular) 6 T. oil, 3 cups mashed bananas, 6 t. lemon juice.

Honey Pecan Butter:
1/3 cup toasted pecans, chopped. Mix with 1/2 c. softened butter and 1/4 cup honey until fluffy.

Sift together dry ingredients. Beat eggs with milk, then add oil. Stir in bananas and lemon juice and add to flour mixture. Fry until dry around the edges. Serve with Honey Pecan Butter.

This is a fun company breakfast. Play around with the ratios of wheat to white flour and find what you like. It always seems to take more buttermilk than the recipe calls for. I like them thinner.
