1 T. lemon juice
1 T. instant coffee powder (regular or decaf)
1/4 cup melted butter or margarine
1/4 tsp. onion powder
1/2 tsp. salt
2 pounds catfish or tilapia fillets

Directions:
Directions:
Combine lemon juice, instant coffee, butter, onion powder and salt. Brush mixture thickly onto fillets. Broil 3 - 4 inches from the outdoor grill grates for 10 minutes. Turn and brush fish again with sauce. Broil 10 minutes longer or until fish flakes easily. Brush the fish again with the coffee butter and serve. Note: Tilapia will not take this long to cook as it is a thinner fish than the catfish.
If you prefer to broil in the oven, have the rack about 6 inches from the broiler and cook for about 5 minutes per side. Again, not that long for Tilapia.

This came out of our newspaper several years ago, and although it did not sound, once Grandpa put it on the grill, it has become my favorite way to cook fish. It does not taste like coffee or lemon, but the mixture is really delicious. I like this in the summer as my kitchen stays cool and it is a quick meal year round. Serve with Kraft Mac & Cheese and green beans.
