2 T olive oil
1 T butter
1/2 cup onions, chopped
1/4 cup celery, chopped
1 garlic clove, pressed or minced
1 - 2 (8 oz.) cans tomato sauce (depending on how thick you want the sauce)
1 (6 oz.) can tomato paste
2 T grated Parmesan cheese
1 tsp. dried basil (optional)
1 tsp. dried oregano
1 tsp. dried parsley
1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. black pepper
1 small bay leaf (optional)
1 tsp. fennel seeds (optional)

Directions:

In a large skillet or sauce pan, melt butter with the oil. Add the onion, celery, dried herbs and garlic and sauté until soft and transparent.
Add tomato sauce and tomato paste and stir until smooth.
Add remaining ingredients and bring to a slow simmer.
Simmer for 30-60 minutes (or not at all depending on your taste and time frame - this will thicken the sauce the longer it simmers, so this is where depending on how thick you want the sauce whether you add one or two cans of tomato sauce).
Remove the bay leaf and spread the sauce on your prepared pizza dough.
My family doesn't like "chunks" so I use an emulsion blender to blend the sauce before eating (or in a regular blender as well, just be careful of blending hot liquids - the lid could explode off :)).

The last time I made this, I actually had the time to let it simmer, but I found it was too thick and the bay leaf took over the flavor, so next time I will add more tomato sauce and omit the bay leaf.
