1 1/8 cups water, room temperature
1 1/2 tsp. salt
3/4 tsp. sugar
3 cups bread flour
2 T. wheat germ (or additional flour)
1 3/4 tsp. yeast, active dry, instant or bread machine
cornmeal for dusting

Directions:
Directions:
Place all ingredients except for the cornmeal, in the order listed, in the bread machine pan fitted with the kneading paddle. Select the dough cycle.
When cycle is completed, remove dough and transfer to a lightly floured surface. Punch to deflate and let rest for 10 minutes.
Shape dough into a long cylindrical shape and place on a baking sheet that has been dusted with cornmeal. Cover loosely with plastic wrap that has been sprayed with cooking spray and let rest 30 - 40 minutes. While dough is rising, place a pan of hot water on the bottom rack of the oven and preheat to 425º.
Using a serrated knife, make 3 diagonal slashes in dough (this can also be done before the dough rises), about 1/4-inch deep. Bake bread 20 - 30 minutes until browned and hollow sounding when tapped. Brush immediately with a little bit of butter. Cool on a wire rack.

Whenever I make a pasta dish (spaghetti, lasagna, etc) I always make this bread and then slather slices with my homemade Garlic Butter and toast the slices under the broiler. YUMMY!! :)
