Potato Rounds or Tater Tots (amount determined by how many you and your family will eat, and then add another handful :))

Ole seasoning:
4 tsp. Lawry's Season Salt
2 tsp. paprika
1/2 tsp. cumin
1 tsp. cayenne pepper

Cook potato rounds or tots to your preference and package directions (deep fried or oven baked, NOTE: the seasoning sticks better to the oil fried, but if you prefer the healthier baked kind, when they come out of the oven, spray with a little cooking spray before sprinkling with seasoning).

Combine seasoning ingredients and place in a storage container (there will be enough for 3 - 4 servings, depending on how much seasoning you put on).

I find placing the cooked potato's into a big bowl, applying some seasoning, stirring it around (or carefully flipping them in the bowl by hand - like you see the professional chefs do with pans on the stove :)) and then testing one, repeat as necessary until they are coated to your taste preference.

This isn't really a vegetable per se, but none of the other categories really fit either.
We love Taco John's Ole's and have come up with this at home recipe that we cook up almost every time we have taco's.
