1 cup flour
1/4 cup confectioners sugar
1/2 tsp. salt
2 eggs
1 cup milk
1 tsp. vanilla

Directions:
Directions:
Sift together flour, sugar and salt and set aside. In another bowl, combine eggs, milk and vanilla and beat well. Add this to the flour mixture. Cover and let stand for at least 30 minutes. Heat fry pan and grease lightly with oil. Pour in just enough mixture to cover the pan thinly. Tilt pan so batter spreads. Cook on one side, turn and brown other side. Repeat until all batter is used.

May be filled with fruit, eggs, ham or cheese. I love it with strawberries and whipped cream.
