4 1- 1 1/2 inch thick pork chops
4 oz of fresh spinach, torn into bite size pieces
8 slices of smoked Gouda cheese
1 cup of gluten free bread crumbs
3 T horseradish mustard
Creole seasoning to taste

Directions:
Directions:
Preheat oven to 400 degrees F. Coat a rimmed baking sheet with cooking spray.

Lay each chop flat on a cutting board and with a sharp knife held parallel to the board, cut a pocket into the chop leaving 3 sides intact.

Stuff each chop with spinach and cheese. Put bread crumbs in a shallow dish. Coat each chop with a thin layer of horseradish mustard then roll in crumbs and place on baking sheet.

Sprinkle with Creole seasoning.

Bake for about 30 minutes until done.
