1 cup Madeira
6 T vegetable oil
1 pound peeled, halved shallots
6 T flour
4 cups turkey stock
2 bay leaves
3 sage sprigs
salt and pepper to taste

1. While turkey is resting, tented with foil:
Place roasting pan with turkey drippings over medium-high heat; bring to a simmer. Add Madeira and whisk for 1 minute, scraping up all of the browned turkey bits. Strain into gravy separator.
2. In a large pan over medium heat, warm vegetable oil and add the shallots. Cook, stirring occasionally, for 10 to 15 minutes, until soft. Add 6 T flour, stirring constantly, for 1 minute. Whisk in 4 cups turkey stock; add 2 bay leaves and 3 sage sprigs. Bring to a simmer over medium-high heat. Reduce heat to medium-low; simmer 8 to 10 minutes. Add strained pan drippings; season with salt and pepper. Discard bay leaves, sage and shallots.
