6 cups milk
6 tablespoons flour
6 tablespoons butter
1 lb box elbow macaroni
1 1/2 lbs cheddar cheese
salt
pepper

Directions:
Preheat oven to 350 degrees. Melt butter on low heat in a large stockpot. Gradually add in the flour to make a rue. Keep stirring continuously to break up lumps and get a smooth light beige rue. Once this is done, gradually add 6 cups of milk - 2 cups at a time until well blended. Keep stirring until milk appears to be warm. Add 1 lb of the cheddar cheese (leaving the other 1/2 lb aside). Add salt per your liking. Keep stirring for about 20 minutes so that the cheese sauce is not lumpy and is well blended. Meanwhile, prepare elbow macaroni per package directions to "al dente". Strain noodles and put in 13x9 casserole dish. Pour cheese mixture (minus about a 1/2 cup) on top of the noodles and spread around so the sauce fills up the macaroni insides. Cover with remaining cheese and add salt and pepper to your liking. Bake in a 350 degree oven for 30 minutes, watching carefully that the additional cheese is browning, yet not burning. (trust me, it happens :))

Let cool for 5 minutes or so and enjoy!
