Focaccia:
2-1/4 tsp. yeast
1-1/4 cup warm water
3-1/4 cups flour
1 tsp. salt

Toppings:
Olive oil
1 tsp. rosemary
1/2 cup red bell pepper, chopped
1/2 cup onion, chopped

Directions:
Directions:
Dissolve yeast in warm water. Combine ingredients for focaccia and knead for 8 minutes. Shape into 2 balls and flatten to about 1-inch or press dough into two 9-inch round baking pans. Cover and let double in size, about 45 minutes. Preheat oven to 425-degrees about 20 minutes before rising is done. Prepare toppings. After dough is doubled, rub dough with olive oil. Press toppings into dough slightly. Bake for about 30 minutes or until browned. You may wish to use your imagination and vary toppings. I like fresh tomatoes and basil on mine.
