1 package ground beef
1 small onion, chopped
2 or 3 garlic cloves, minced
1 or 2 celery ribs, chopped
Red or green pepper, chopped
1 can tomatoes
1/2 cup rice
2 cups water or beef broth or a combination
American Cheese Slices or cheese of your choice

In a hot skillet add 2 tablespoons of oil. Brown ground beef in the hot oil until the pink color disappears. Add chopped onion, garlic, and peppers. Sauté about 5 or 6 minutes or until softened. Add rice, tomatoes and water and simmer for about 25 minutes or until all the liquid has been absorbed by the rice. Check after about 20 minutes to make sure it still has water on it. Do not let it boil dry as the rice will be hard again. You want the water absorbed into the rice, but not cooked long enough to burn any ingredients. Top with slices of cheese. I covered the top of the meat with cheese then added more at the table if anyone wanted more.

This was a go-to recipe when we were first married in San Antonio. It is a very inexpensive recipe and is quick to put together. The rice stretches the meat and it is good as left-overs for lunch.
