Crockpot Carolina BBQ Recipe

2 onions, quartered
2 T brown sugar
1 T smoked paprika
2 tsp salt
1/2 tsp ground black pepper
1 (4-6 lb.) pork butt or shoulder roast
1T liquid smoke

Double these if you like BBQ sauce for serving:
1 c cider vinegar
1/3 c Worcestershire sauce
1 1/2 tsp crushed red pepper flakes
2 tsp sugar
1/2 tsp dry mustard
1/2 tsp granulated garlic
1/4 tsp cayenne pepper
1 T Arrowroot flour (optional thickener for table BBQ sauce)

Directions:
Directions:
Place onions in crock pot (dehydrated onions works also).
Blend brown sugar, paprika, salt & pepper; rub over roast.
Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, mustard, garlic, and cayenne pepper, and stir to mix well.
Drizzle about 1/3 of mixture over roast. Cover and refrigerate remaining mixture.
Cook roast on low for 7-10 hours.
Remove meat and shred with forks. May discard onions if you prefer. Add juices from crockpot and remaining vinegar mixture (a portion may be reserved to pass).
Mix Arrowroot flour with a couple Tablespoons of water to dissolve. Add mixture to reserved vinegar mixture and heat in small sauce pan until desired consistency for BBQ sauce.
Serve BBQ plated or on buns with coleslaw. Add additional hot sauce as preferred.
