1 Uncle Ben's Ready Rice Long Grain and Wild
1-16 oz bag Kroger frozen broccoli cuts
1 1/2 C chicken broth
1/2 stick butter
1 onion diced
1 carrot diced
1 celery stalk diced
little less than 1/4 C flour
1/4 C heavy cream
1 t salt and pepper
1/2 c panko bread crumbs

Preheat oven to 375'.

Microwave broccoli for 7 minutes, drain any water off when done. Cook Uncle Ben's rice according to package in the microwave. Saute diced onion, carrot, and celery in skillet with 1/2 stick butter. Cook until tender (8 minutes) stirring frequently. Add flour once veggies are cooked and blend well. Add chicken broth and stir until thick, then blend in heavy cream. Season to your taste with salt and pepper (1 t each works well).

In a 2 quart casserole dish, add 1/2 the rice to the bottom of the dish, top with 1/2 of the broccoli--repeat for a second layer. Pour the veggie/broth mixture over the broccoli/rice. Melt 1 T butter and mix in the panko crumbs and then sprinkle on top.

Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes.
