London Broil (2 to 2-1/2 lbs.)
1 tbsp. vegetable oil
2-3 tsp. kosher or coarse salt
Cracked black pepper

Sprinkle both sides of steak/roast evenly with salt. Wrap tightly with plastic wrap and refrigerate for at least 3 hours. Remove from refrigerator 1 hour before grilling. Approx. 20 minutes before grilling, light grill and turn on all burners. Close the cover and heat until very hot, about 15 minutes. Unwrap steak, brush both sides of steak with oil and sprinkle liberally with pepper.

Place steak on hottest part of grill. Grill, flipping steak every 4 minutes until it reaches desired doneness. Place steak on a cutting board, tent with foil and let rest about 10 minutes. Slice at 45-degree angle very thinly and serve.

Note: Do not recommend overcooking. The longer you cook a London broil, he tougher it will be.
