1 cup unsalted butter (softened)
1 cup brown sugar (packed)
1/3 cup granulated sugar
2 eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1 1/3 cup all purpose flour
3 cups old fashioned rolled oats
2 cups butterscotch chips

Preheat oven to 350
In a mixing bowl cream together butter and sugars. Add salt, vanilla, and eggs and mix until smooth. Add cinnamon, nutmeg, and baking soda, mixing well. Gently mix in the flour until combined. Add oats and butterscotch, mixing until incorporated.
Scoop by heaping tablespoons onto ungreased cookie sheets (I like to line mine with silicone baking mats) 2" apart. Bake for 7 minutes and let cool on the sheet for a couple minutes before moving to a cooling rack. They will be soft until cooled.
Store in an airtight container.
