1/2 yellow pepper, coarsely chopped
1/2 orange pepper, coarsely chopped
Pint fresh mushrooms, sliced
1/2 onion, coarsely chopped
12 eggs, beaten
1/2 cup cream
4 thick slices bread, your choice of grains
Hollandaise or cheese sauce, optional.
Bacon,Sausages or Ham

Directions:
Directions:
Saute vegetables in skillet with some butter. Keep warm.
Beat eggs, add 1/2 cup cream, beat lightly and cook.
Toast bread, and place on warm plates, divide eggs into 4 servings and put on top. Add vegetables and drizzle hollandaise or cheese sauce over, optional.
Serve with your choice of meat or hash browns.
