Hash Brown Potatoes, frozen
1 can cream of mushroom or cream of celery soup
1/2 can water
3-4 ounces cream cheese
1/2 small onion, chopped (optional)
salt and pepper to taste

Directions:
Directions:
Heat 2-3 T. oil in a large skillet. Put enough hash browns to cover the bottom of the pan. Add onion if you are using it. Let cook a few minutes to get a little color on the potatoes. Add soup and water and stir to combine with the potatoes. Add cream cheese and allow to melt into the mixture. Let simmer for 5 minutes or so to combine flavors. Serve.

May not need all the water. Check the consistency of the potatoes before adding more. I just add enough to make it creamy and thick.

I found this recipe on the back of a bag of Hash Browns years ago. This is so creamy and delicious. I make this when I want comfort food. It is easy to prepare and inexpensive.
