1 stick butter, melted
2 pounds potatoes, peeled
2 cups sour cream
10 ounces Cheddar cheese, shredded
1 can cream of mushroom soup
1 small onion, finely chopped
1 tsp. salt
1/2 tsp. pepper
2 cups crushed Ritz Crackers

Preheat oven to 350 º F. Grease a 9 x 13 inch casserole dish. Use a large hole box grater or the grating blade of a food processor to shred the potatoes into a large bowl. Add the sour cream, Cheddar, soup, onion, salt and pepper. Turn this mixture into the prepared baking dish and sprinkle with the crushed crackers. Pour the melted butter over the top of the casserole. Cover with foil and bake for 45 minutes, then uncover and bake until lightly browned on top, about 20 minutes more.

Total cook time is 1 hour. Might want to cut the salt to 1/2 tsp. because of the cheese and salt in the soup. This recipe came from Trisha Yearwood. I watched her make this one morning. It looks so good. Have not made this yet, but plan to make in the near future.
