3 cups mashed potatoes
2 - 3 tablespoons flour
2 eggs
1/3 cup sour cream
1 cup of shredded cheese (Cheddar, Mozzarella, Monterey Jack, your favorite)
2 tbsp grated Parmesan, Romano or Asiago Cheese
2 tbsp chopped chives
salt and pepper to taste

Directions:
Directions:
Preheat oven to 400º
Grease a cupcake pan.
In a bowl, whisk eggs.
Add sour cream then add cheeses and chives.
Add potatoes then salt and pepper if needed.
Spoon mixture into pan filling cups to just below the top. Leave a little room to expand.
Bake for approximately 25-35 minutes until they start to pull away from the sides and are golden brown
Serve with extra sour cream.

Can also be pan fried like a pancake.
