3 T. butter
1/2 cup each onions, celery, green pepper
2 T. flour
1/8 tsp. pepper
1/2 tsp.mustard
1 cup milk
3 cups frozen French Fries
1 1/2 cup cubed cooked ham
1 cup shredded cheese
4 ounces cream cheese

Preheat oven to 400 º F. Grease a shallow two-quart baking dish. Melt butter in large skillet. Sauté onion, celery, and green pepper until golden, 5-8 minutes. Reduce heat to medium, blend in flour and seasonings. Add milk, cook while stirring until smooth and thickened. Add 1/2 cup shredded cheese and the cream cheese and stir until melted. Arrange a layer of potatoes, then ham cubes in baking dish; pour cheese-vegetable sauce over the top. Cover tightly with foil. Bake for 30 minutes, Uncover, top with remaining cheese. Heat in the oven 5 minutes until cheese is melted.

I use this recipe almost every time we have left over ham. Grandpa and I love this recipe. It is easy and a good way to use up left-over vegetables and ham. You could use hash browns instead of French Fries. Do not use any left over fries from a restaurant. They are too salty. I also have measurements for a 3 quart casserole. Just increase everything a little.
If you have other veggies, feel free to use whatever you have.
