3/4 c. butter or margarine (for DF)
1 1/2 c. brown sugar
2 eggs, well beaten
1 1/2 - 2 tsp. vanilla
1 c. raisins or currants
1 c. chopped dates
1 c. candied pineapple
1 c. chopped walnuts
2 c. red and green candied cherries
1 c. coconut
2 c. all purpose flour (or GF all-purpose flour with xanthan gum)
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. cloves

Directions:
Directions:
1) Preheat oven to 350ºF.

2) Cream butter and sugar.

3) Add eggs, dry ingredients, fruit and vanilla.

4) If dry, add milk.

5) Drop from teaspoon onto baking sheet and bake for 7 minutes (on third rack from the bottom). It will often look undercooked, but don't cook longer. They darken after removing from oven.
