1 ½ c. sifted pastry flour, or 1 1/3 c. all purpose flour
2 ¼ tsp. baking powder
½ tsp. grated nutmeg
5 tbsp. Crisco
½ c. granulated sugar
1/8 tsp. salt
1 egg
½ c. milk
6 tbsp. butter
½ c. granulated sugar
1 tsp. ground cinnamon

Directions:

1) Preheat oven to 350ºF.

2) Measure flour, baking powder, salt and nutmeg into a small bowl.

3) Cream shortening in mix-master slightly and gradually blend in ½ cup sugar.

4) Add beaten egg yolk.

5) Stir in dry ingredients alternately with milk and combine after each addition.

6) Beat egg white until stiff but not dry.

7) Fold in egg white.

8) Fill small muffin pans 2/3 full.

9) Bake in oven for 20-25 minutes (test after 13 minutes).

10) Roll quickly in melted butter, then in ½ cup sugar mixed with cinnamon and nutmeg.
