1/4 cup brown sugar
1/4 cup sweet paprika
3 Tbsp black pepper
2 Tbsp salt,
1 Tbsp hickory smoke salt
2 tsp garlic powder
2 tsp onion powder
2 tsp celery seeds
1 tsp cayenne pepper(can cut down to l/2 tsp)

For beer can chicken, Wash and dry chicken with paper towels
rub chicken with 2 Tbsp vegetable oil. Rub lightly inside and out with oil and
3 Tbsp dry spice rub.
Preheat grill to medium. Place sheet of aluminum foil over grate where
chicken will be placed. Place chicken over opened beer can stand,
balancing chicken on legs and beer can
Cover grill and cook 1 1/4 hrs or until temp reaches 165'
Let chicken rest 10 minutes under foil before carving.
I bake the chicken in 350' oven on a foil lined cookie sheet on beer can
stand for 1 1/4 hrs.
