1 unbaked 9 inch pastry shell
4 eggs (can use egg beaters or some of each)
2¼ cups milk ( can use 2%)
2/3 cup sugar
1 teaspoon vanilla
¼ teaspoon salt
nutmeg

Directions:
Directions:
Preheat oven to 400°. Bake prepared pastry shell for 5 minutes (do not prick). Cool on a wire rack.

Put eggs in mixing bowl. If using whole eggs beat them. Add milk, sugar, vanilla and salt and blend well. It is really important that you dissolve all the sugar well or you will have a weepy pie.

Pour into pastry shell and sprinkle with nutmeg. Bake for 15 minutes at 400°, then reduce heat to 325° and bake for 35 - 40 minutes more or until a knife inserted into the center comes out clean. Cool on a wire rack.
