2 unbaked pie shells 9 inch or larger
2 sticks unsalted butter, room temperature
3¾ cups sugar
½ cup all purpose flour
1/3 cup cocoa powder
6 eggs
¼ teaspoon salt
1½ teaspoons vanilla
1 cup plus 2 oz buttermilk

Directions:
Directions:
Combine sugar and butter and mix until well blended. Beat in the eggs and mix well. Combine and whish the flour, cocoa and salt until mixed and then add to the butter mixture. Add buttermilk and vanilla to the mixture and stir until well blended. Pour into pie shells and bake at 350° for 45 minutes or until it is firm and not jiggling in the middle. Cool completely before cutting. Store leftover pie in the refrigerator. Note that if you invert a cast iron skillet in the oven and preheat it with the oven, the pie will cook more evenly and the crust gets browner on the bottom.
