3 cups flour
1 teaspoon salt
1 teaspoon soda
½ teaspoon baking powder
1 teaspoon cinnamon
2 cups sugar
1 cup oil
3 eggs beaten until fluffy
1 teaspoon vanilla
2 cups shredded zucchini
1 cup nuts if desired

Directions:
Directions:
Preheat oven to 325°. Sift together dry ingredients. Combine sugar and oil and beat well. Add eggs and vanilla and mix well. Stir in dry ingredients until moist but do not beat. Add nuts if desired. Gently stir in zucchini. Put mixture into 2 loaf pans. Bake at 325° for 45 - 50 minutes or until done. Cool 10 minutes in the pan and then remove and cool on a rack.
