9 oz. milk
9 oz. double cream
Pinch of salt
1 vanilla pod
4-1/2 oz. granulated sugar
3 eggs
3 small white bread rolls
1-1/4 oz. butter
1/2 oz. raisins, soaked in water
3/4 oz. apricot jam
Icing sugar

Directions:
Directions:
Bring milk, cream, salt and vanilla pod to a simmer. (Use whipping cream instead of double cream if desired). Combine sugar and eggs; add to milk mixture. Sieve mixture. Slice rolls thinly and butter. Arrange in an ovenproof dish; add raisins then milk mixture. Sprinkle remaining butter on top. Poach carefully in a bain-marie or pan of hot water. Cook in a 350°F oven for 45 minutes. Serve with dribbles of apricot jam; dust top with icing sugar. Makes 4 servings.
