2 lbs. sweetbreads cooked
1 lb. sliced mushrooms sauteed
1/4 C butter
salt to taste

Sauce Supreme:
3 T butter
3 T flour
1 C hot chicken stock
1/2 C cream (heavy)
salt to taste
paprika to taste
sherry wine to taste

Directions:
Directions:
2 lbs. sweetbreads cooked, 1 lb. sliced mushrooms sauteed in 1/4 C butter & salt to taste.

Sauce Supreme:
Melt butter, add flour, cook, gradually add stock. Turn off fire, add cream, after well mixed bring to a boil & stir constantly. Add seasonings - mix in sweetbreads. Serve over rice.
