4 - 6 lb. briscut of beef (can use sirloin tip, rump, etc.)
Peacock's Good Gravy
2 chopped onions
1/8 t red pepper
1/8 t cumin seed or oregano
2 t salt
2 garlic buds minced
1/2 C ketcup & chili sauce mixed
1/2 C tomato sauce
1 C beef base
sliced pumpernickle
1 T paprika
1 t dill weed
parsley
carrots
celery
new green cabbage
boiling onions
new potatoes
green beans

Directions:
Directions:
Dry meat will with paper towel. Cut off excess fat but not all. Put fat in roaster and render. Paint roast with Peacock's Good Gravy. Brown in fat on both sides. Take meat out and brown 2 chopped onions in fat. Remove all fat. Rub roast with: 1/8 t red pepper, 1/8 t cumin seed or oregano, 2 t salt and 2 garlic bus minced.

Place roast back in pan, add: 1/2 C ketcup & chili sauce mixed, 1/2 C tomato sauce, 1 C beef base. Crumble into above 1 thick or 2 thin slices pumpernickle.

Simmer in oven, covered, 1 hr at 325º. After 1st hour check gravy, add more hot water if needed. Add carrots, celery, new green cabbage, boiling onions, new potatoes, fresh green beans. Cook 1 more hr. uncovered.

Sprinkle with paprika, dill weed & parsley.
