4 Salmon fillets - 6 to 8 oz. each.
Rub: 1 tsp lt. brown sugar, 1/2 tsp. Kosker salt, 1/4 tsp. cornstarch, pepper.
Glaze: 3 Tbsp. lt brown sugar; 2 Tbsp. Soy Sauce; 1 Tbsp. whole grain mustard (ground mustard); 1 Tbsp. water; 1 tsp. corn starch; 1/8 tsp red pepper flakes; 2 Tbsp. sweet5 Jap. wine;
Whisk glaze ingredients together in a small sauce pan. Bring to a boil over medium heat, simmer until thicken (about 1 minute)

Set oven to 300 degrees. Combine Rub and pat on dry Salmon. Heat oil in a 12 inch skillet until smoking. Place salmon, flesh side down in skillet and cook until well brown. (about 1 minute) Using tongs flip and cook on skin side for 1 minute. Remove skillet from heat and spoon on glaze. Transfer skillet to oven and cook for 7 to 10 minutes.
