Maple Dijon Pork Tenderloin Recipe

2 Pork Tenderloins - 12 oz each

1 tbsp butter
1/4 cup maple syrup, plus 1 tbsp
1/4 cup apple cider vinegar (I used white as that is what I had on hand)
4 tbsp Dijon mustard, divided
1/2 cup mayonnaise

Directions:
Directions:
Preheat the oven to 375º. In a large oven proof skillet , heat butter and and cook over medium heat. Add the pork to the pan and cook, turning until golden brown on all sides, about 6 to 8 minutes. Set aside pork.

In a small bowl, combine 1/4 cup maple syrup, apple cider vinegar and 2 tbsp mustard. Add mixture to the skillet and cook over medium to high heat, stirring until the sauce is reduced by half.

Return the pork to the pan and turn to coat with the sauce. Place the skillet (or transfer to a oven proof dish) in the preheated oven and roast, basting every 10 minutes with the sauce for 15 to 20 minutes or until the meat reaches 150º F.

Let the pork stand 10 minutes before slicing. In a small bowl combine the mayonnaise, 1 tbsp maple syrup, 2 tbsp mustard. Serve sliced tenderloins with the maple Dijon mayonnaise.

I have never cooked a pork tenderloin until now. This was amazingly delicious and this MACY family decided this recipe is a keeper and we will make it again and again.
